Banana and Walnut Muffins a La Madeleine

Ingredients

5 ripe bananas mashed

1/4 cup cold-pressed walnut macadamia or olive oil

1 tablespoon honey (or 1 teaspoon Nature Sweet Sugar Substitute)

1 teaspoon vanilla extract

2 1/4 cups all-purpose whole wheat (or gluten-free flour*)

3/4 teaspoon baking powder

3/4 cup chopped walnuts

1/2 teaspoon salt

3/4 teaspoon ground nutmeg

1 teaspoon baking soda

Directions

Preheat the oven to 175°C (350°F).

Lightly oil a 12 cup muffin pan. Stir together the bananas, oil, honey, and vanilla in a bowl.

In another bowl combine the flour, baking powder, walnuts, salt, nutmeg, and baking soda.

Stir the wet ingredients into the dry mixture and blend with a spoon.

Spoon this mixture into muffin cups, filling to the rim.

Bake until golden brown-about 20–25 minutes.

Serve warm.

Notes

*Substitute whole wheat flour plus 1/2 tsp. baking soda and 1/2 tsp. baking powder.
